All I can say is : thank goodness for my Fiestaware. Even diet food looks good on it.
Actually, this salad is really, really good. I'm just bored and out of ideas for my diet. I NEED suggestions. Featured above is my version of Greek salad: Romaine, Spinach, Chicken Breast, Feta Cheese, Cucumber and Kalamata Olives. Plus a nice light Greek Vinaigrette.
So, help me out. I need some yummy low calories lunch options. Lunch is my hardest meal - it's just me at home (well, Eloise is not on a diet), so I like to keep it simple. I'm having a giveaway starting tomorrow and I'll put your name in twice if you leave me an idea. How's that for a bribe? Heh, heh.

Oh Goodness. Dieting has been an off n on way of my life for 25 years now... That said..recently I have found sucess with these tips:
Apple(Granny Smith Apple pieces bite size) Romaine Bleu chz crumbles w/ Sugared Pecans salad. I use a Balsamic/apple cider dressing, very little!!
Also a can of good old Progresso Soup & a bread stick warmed with a tad of EVOO and Parmesan grated w? a dash of garlic powder & Sea Salt over ot... YUMMY AI enjoyed lunch, got to chew on something and actually was able to consistantly LOSe weight when I followed this! I hear you on lunch beign the hardest..homewith children.. eatign their left overs , a few bites while cooking, no ones home so no ones looking... I know that feeling. WW has an excellent almost no-calorie veggie soup that's easy to make as well and using fresh local veggies for the soup always makes me feel good about eating soup... I've been having success eating healthy as if I'm on a Diabetics Food plan diet as well.... I'm sure you have a ton of new great ideas here and I hope you enjoy at least a few dozen of them!!
Oh, Taco salad... my friend uses turkey ground up for the beef replacement in tacos, adds her 8 or so nachos and places it right on her green salad & adds freshly shredded cheese and loves that!
I adore chickpeas & they are good for protien but higher in calories so when I add them to salads I account for that. Keeping a journal of every bite & feeling accountable to myself that way also helps keep me on track.... Not everyday can be a perfect day so I am hopeful you find what's right for you and enjoy your meals, it's a chore preparing foods you dread eating!!

Sugared Pecans
Oven at 300*
2 C Shelled Pecans~ Large bowl
Beat 1 egg white
1/4 C Sugar (or splenda)
+ 1 Tablespoon Cinnamon, set aside the sugar & cinnamon mixture
Moisten Pecans in beaten egg white. Sprinkle cinnamon sugar mixture over nuts.
Add more nuts if to runny.
Use parchment paper to line cookie sheet. Bake 4 minutes each side watching closely to obtain evenly colored golden brown nuts. Pecans will harden once cooled. These store well for a few weeks in airtight container in fridge.

I would have to pass on that salad...OLIVES = No thanks! I have subscribed to Cooking Light magazine for the past (can't tell you how many...10) years! LOVE IT! Love 98% of the recipes and we try a LOT! Go online and try a few. I will send you some great recipes tomorrow - it's 1 a.m. and I need some sleep!

My suggestion is for you to drink a glass of room temp water before each meal-you eat less. Also eat something you really want once a day-that way you are not dying for your favorite things all the time.

People already have given such great ideas! I love hummus, that is always a favorite. I also love black beans. I make the goya recipe for them. I also LOVE the flavor of chili, so sometimes I make myself a mix of a can of tomatoes, can of beans and cook it up with lots of chili powder and cumin and whatever other spices I feel like putting in.

How about grilled Portobello Mushroom slices with grilled onion, red, green or yellow peppers, zuchini or summer squash and grilled Asparagus spears drssed with a bit of Balsamic and wrapped in a whole wheat tortilla with just a small smear of goat or boursin cheese? You can grill a bunch of the veggies in advance and store them in an airtight container. This mix is also good over pasta with a bit of ricotta cheese melted in with pasta water to make the sauce.

Maybe not so much diet, but I like a tortilla (or half of one) spread with peanut butter, bananas, raisins and granola and rolled up like a wrap. It's very filling and doesn't take much time.

Here's a good lunch--use a lo-carb flour tortilla (I like Mission Carb Balance--11 g fiber!) and fill with Romaine and shredded chicken and a sprinkle of lite cheddar and a little ranch dressing. Or fill with Healthy choice ham and lite cheese, warm in the micro and add lettuce and salsa. Yum! Even my teen likes this. Your salad looks yum. Here's another idea--make brown instant rice in veggie broth instead of water, add steamed broccoli and a few toasted walnuts or slivered almonds and sprinkle of co-jack. Then salt and pepper to taste. This is awesome!(I posted this on the other thread and wanted to make sure you saw it just in case you wanted your diet ideas on in one place :) )

Bulgar wheat salad, I love it quick easy and satisfying.
Make the wheat according to the packet instructions, normally 5 mins in a covered bowl of boiling water. Then just add anything you like and a dressing of your choice.
I usually add olives, dried apricots, cherry toms, ripped up mint, spring onions (scallions ?) and sunflower seeds.
My dressing of choice - Ceasar
I make a big batch and keep it in the fridge, it tastes better at room temp though

Love these ideas! I just got a panini maker and have been enjoying testing out new combos... great way to use up leftover veggies or chicken and I've found that with the non-stick plates on the panini machine I don't need to oil the bread first (although sometimes I will add a bit of olive oil for flavor).
