I suppose the birthday photos preempted the Monday Menus. That's my excuse. We kind of slacked off last week, but I will share anyways.
Sunday: Machaca Beef Burros (with Green Enchilada Sauce), Beans
Monday: New Yorkers Sandwiches (so good : super thin sliced pastrami, coleslaw and thousand island dressing on a toasted onion roll)
Tuesday: Eggs on Toast
Wednesday: Grilled Hot Dogs
Thursday: Mexican Take Out (bad, bad)
Friday: Clam Chowder, Rolls
I figure eating in on Sunday made up for the "out" on Thursday. Hee, hee. This week is already better, I've had a little more time to plan and shop.
What's on your menu this week? I need a GOOD meatloaf recipe - anyone?

Honestly, this is called "World's Best Meatloaf"
11/2 cup soft bread crumbs, 11/2 lb ground beef (or pork/veal/beef), 1 beaten egg,1 finely chopped onion, 1/4 tsp. dry Colman's mustard, 1/8 tsp. ground sage (try fresh too about 1 TB),1/2 tsp. ground thyme (try fresh),11/2 tsp. salt,1/4 tsp. pepper, 1/8 tsp. nutmeg, 1 chopped pepper (red or green), 1 8oz can tomato sauce, 1/2 cup grated celery, 1/2 cup grated carrot, (optional: add some garlic, grated zucchini).
Mix meat with egg, add onion, etc. with some of the tomato sauce to moisten. Turn into a greased loaf pan and pour more sauce over top. Bake 350 F for 11/4 hours. Enjoy!

Hi Kimberly, I love this meatloaf recipe from Southern Living.
Herb & Veggie Meatloaf
1 med. onion, chopped
1 tsp. minced garlic (but I add more!)
2 tsp. canola or veggie oil
1 c. shredded carrots
1 c. roasted garlic & herb pasta sauce, divided
1 1/2 lbs. extra-lean ground beef
8 oz. 50% less fat fresh pork sausage
1 10 oz. pkg. of frozen chopped spinach (thawed & drained)
1/2 c. uncooked regular oats
2 tsp. Italian seasoning
1 1/4 tsp. salt
1 tsp. pepper
1 lg. egg, lightly beaten
1. Saute onion & garlic in hot oil over med-high heat for 3 mins. Add carrots & saute 3-4 mins. or until onion is tender; cool slightly.
2. Combine onion mixture, 1/2 c. pasta sauce, beef & next 7 ingredients in a lg. bowl until blended. Shape mixture into a 10"x5" loaf. Place on a rack coated w/cooking spray. Place rack in broiler pan coated w/cooking spray.
3. Bake at 350 degrees for 45 mins. Spread remaining 1/2 c. pasta sauce over loaf & bake 10-15 minutes more. Cover w/aluminum foil & let stand 10 mins.
(You can also sub 2 lbs. lean ground turkey for beef & pork.)
