I love how Mel posts her weekly menus on Mondays - what a great idea for making up grocery lists, etc. I pretty much dread going to the grocery store. It's worse than doing laundry. So, I think next Monday I'm going to try out Mel's approach. Yeah, next Monday. Since this is a holiday week and all. (Hee, hee).
Anywhoo - the winner of the cookbook from the weekend's giveaway is MICHELLE! Yay! I'll send that little goodie off in the mail. And Anita? If you want me to send one to Alaska, just let me know. I know you would enjoy it.
Might as well share one more recipe from the book, too. I promised Erica that there are TONS of great recipes in this book. This enchilada recipe is from Pam Redman - and it's a classic.
Chicken Enchiladas
1 cooked chicken (boned and cubed) (I use a rotisserie chicken)
1/4 c. butter
1/2 c. spicy salsa or picante (I sometimes throw in 1/2 red bell pepper)
1 tsp. chili powder
1 lb. shredded cheese
1 sm onion, chopped finely
6 oz. cream cheese
1 pkg. flour tortillas (6-8 inch)
1 sm can enchilada sauce (I use two cans green sauce)
(See, that's the thing with classic recipes - you end up fine tuning them just a tad).
Saute' the onion (and bell pepper) in the butter in a large frying pan. Add chicken meat, stir in salsa and chili powder. Blend in cream cheese (I add some extra enchi sauce here) and add 1 cup shredded cheese. Heat carefully until cheese melts, then set aside.
Fill each tortilla with meat mixture, roll up and place in greased baking dish. (Love me some La La's tortillas).
Pour enchilada sauce over tortillas and sprinkle with remaining cheese. Bake at 350 degrees for about 1/2 hour (until browned and bubbly).
Man, these are so delish. You can see my little red bell pepper there. I also chop a little cliantro and sprinkle it on top. Yum!
So, there you go. Another treat from the Southwest. I've also made Machaca Beef, Oven Stew, Calico Beans and Never-Fail Pie Crust from this book. I want to try Mandy's Potato Corn Chowder and the Bacon, Lettuce and Tomato Dip recipe. I will keep you informed. (See Friday's post if you are interested in buying the cookbook).

and oh my, you should've seen grocery shopping yesterday. i had to make sure andy was coming with me as i had three lists - coupons, thanksgiving, the rest of the week - and knew i'd need him to entertain the girl and push the cart. lol

mmm ok I think I may be sold... I need to get together with you and pass on a couple of bucks and get me a new cookbook! This does look yummy I think I know what will be on the menu next month for sure... (this month is already done!)
Oh if you want an amazing tip on getting rid of soap scum.. check out my blog I sware you will never have to clean your shower/tub again! IT IS AMAZING!!!

The recipe!!! It has a few more ingredients than the one Keith gave me years ago. One of Blayde's favorite dishes ever. I don't eat Mexican myself so isn't high on my list ... sure is on his!
