How's that for covering my butt? I had good intentions of posting this Pumpkin Bread recipe early this morning, but my Photoshop program completely froze up. And then my Auntie and Mom came over for coffee (and pumpkin bread). And then Eloise fell off the kitchen chair and knocked the breath out of herself. Woe is me.
So, how about I make it up to you by combining two posts AND doing a giveaway? Yes!
First, the delicious pumpkin bread recipe.
Pumpkin Bread
3 1/2 C. Flour
3 C. Sugar
2 tsp. Baking Soda
1 1/2 tsp. Salt
1 tsp. each: Cinnamon, Nutmeg, Cloves
1/4 tsp. Allspice
1 C. Oil
4 Eggs
2/3 C. Water
2 C. Pumpkin (Libby's, of course)
1 C. Nuts (optional)
Mix dry ingredients in large bowl. In seperate bowl, mix remaining ingredients. Make a well in the dry ingredients and add pumpkin mixture. Mix and pour into loaf pans. Bake at 350 degrees for 1 hour. Makes 3 large loaves. **Note: I make this recipe in nine small loaf pans and bake it for 45-50 minutes.

Bought the cookbook Sunday and spent a little time flipping through it. YUM the recipes look so good!! Lots of variety and the pumpkin bar recipe is actually in a cookbook now. Now for a good recipe...um..cheesy chicken spahgetti in Rockford one..YUM!! Best leftovers EVER

Looking forward to buying the cookbook when it reaches our cong. bookstore. Love love looking through cookbooks. In the meantime, I think my most used recipe is frozen rasp. dessert from (I believe) the Ispeming cookbook.
Crust:
1 ½ c. graham cracker crumbs
6 T butter, melted
4 T sugar
Filling:
1 (10 oz) pkg. frozen raspberries, thawed
1 (8 oz) pkg. Philadelphia cream cheese, softened
1 c. sugar
1/8 tsp. salt
½ pt. whipping cream
Directions:
Mix crust ingredients in bowl: grahams, butter and sugar. Reserve 1/3 c. mixture for top. Press remaining in 9 x 13 pan.
Beat cream in bowl and set aside. In another bowl, beat Philadelphia cream cheese, sugar and salt until light and smooth. Crush raspberries in a blender then blend into cream cheese mixture. Fold in whipping cream. Pour on top of graham crust. Sprinkle with remaining grahams. Freeze overnight.

I love the scalloped potatoes and pork chops. I add in a few sweet potatoes just for kicks. It's a family favorite! (you know how hard it is to find a meal that everyone loves!!)

My very favorite is from a cookbook I don't even own. It was made for us after baby and I got the recipe. Cheeseburger Stew (or soup) from Cokato. Yuuuuummmmmm

I LOVE pumpkin everything, so can't wait to try this recipe! Our church hasn't put out a recipe book in a while (must nudge my mom's womens group to work on that), but my fav recipe from one of my previous employer's recipe book is chicken enchilada casserole. Yum!

I am a collector of cookbooks... I love them and I would love to win, I will check out the site. Is there any other sample recipes becasue I have a rule there must be at least 3 recipes I would cook before buying... perhaps I can just stop by and check yours out...

That pumpkin bread looks delicious!!
There are so many good recipes!! This is hard. I love the cheesy chicken chowder & Berry Berry on a Cloud from Rockford. And, like Jenna I got cheeseburger soup after baby, and put that recipe in the Elk River Cookbook! Yum! Thanks for the chance to win!!

What a coincidence! The very day my mom was raving about your Keith's Enchiladas Recipe. I sure hope I win this one or someone is going to be getting a big hint about what to get me for Christmas.
Best recipes are Berries on a Cloud, meringue dessert (Rockford) and the Raspberry Dessert from the old,old "Sharing our best from the Southwest"

Oh wow! I would have to say the best recipe that I have tried from a cookbook is this amazing Oatmeal Choc. Chip cookie recipe. Here ya go.
1 cup shortening
1 cup brown sugar
1 cup sugar
2 eggs beaten
1 tsp vanilla
1 tsp salt
1 1/2 cups flour
1 tsp baking soda
1/2 cup coconut
2 cups oats
add chocolate chips to taste
Preheat oven to 350. Mix salt, flour and baking soda in separate bowl. Combine first three ingredients until creamed then, add eggs and vanilla. Slowly add the dry mixture to it. Add the coconut, oats and chocolate chips (optional). Bake for 8-10 minutes depending on how big you want the cookies. The bigger the cookie, the longer the time.

I have so many favorites ... all from different books or just collected over time. This one is not from any cookbook, but is a favorite as well. I lean toward the sweet department, can you tell?
Blueberry Cake
Beat until foam: 4 eggs and 1-1/2 c sugar
Alternately add:
1) 1 c milk
Little less than 1-1/2 sticks margarine,
melted
2 tsp vanilla
3 tsp baking powder
2) 2-1/2 c flour
Cover with 1 bag frozen blueberries and sprinkle with granulated sugar. Bake at 350 for 1 hour or until knife comes out clean.
Other favorites include the Crab Salad from the Rockford Cookbook. Delicious and easy to make.

well I don't have a favorite...but I DO have one that I make all the time. Darlene's Banana Bread recipe from the old Phx cookbook. (the only thing I've ever made from it, but delicious nonetheless!)
