It's funny, now that I've dedicated Monday to "foodie days", I spend a lot of time over the weekend pondering which fun thing to share. I have some cute kid/food photos, but they are pretty Christmas-y, so we'll do those next week. Today, it's kind of cold and chilly (ha! 52 degrees is chilly in Arizona), so how about a warm, yummy appetizer? I have this on the menu for Christmas Eve. Yum! I can already taste it. AND, it SIMPLE and easy. My kind of dish.
Barb's Artichoke Dip
1 Cup Mayonaise (use the real stuff)
1 Cup Grated Parmesan Cheese (use the real stuff)
1 (14oz) can Artichoke Hearts, drained
6 oz. frozen Spinach (thawed and drained)
2 cups shredded Mozarella Cheese
2 Cloves crushed Fresh Garlic
Paprika
Thoroughly mix mayo, cheeses, artichoke hearts, spinach, and garlic together in a bowl. Spread mixture into a 8 X 8 baking dish (I used a glass pie plate). Bake at 350 degrees for 30 minutes or until the surface in lightly browned and bubbly. Sprinkle with paprika and serve warm with crackers or French Bread.

Just look at that nice green spinach. Doesn't that look nice and healthy? Snicker.
Sorry, I don't have an "after" photo. It seems we gobbled it down too fast. Ah well. At least I can personally guarantee that it's delish.
